What I Ate in a Day: My Day Off

I've been wanting to do a what I eat in a day for a while now and today is my day off so I figured what better time to do so than now!
I woke up at around 7:30am, I try to still wake up early if I have days off in the week and not sleep in otherwise I can't sleep at night and find it difficult to wake up for the next working day. 
After driving my mum to work it was time for breakfast!

Breakfast-8:30:

For breakfast I made myself a green juice and goat milk yogurt with granola. It's not a very big breakfast but I find it difficult to eat in the morning so it kept me full until lunch.
Here's what went into my green juice: 

Lunch-12:00:


For lunch I had a stir fry. For this you will need:
1 white onion 
1 yellow pepper
1 carrot 
green beans
white beans 
sweetcorn
garden peas 
mushrooms
beansprouts 
spring onion
parsley 
peanuts
fresh ginger
2 cloves of garlic
soy sauce 
sweet and spicy chilli sauce 

Stir frys are really easy to make, for this I just cooked off the onion, pepper, and carrot in a wok with a bit of oil, then once they were soft I added in the garlic and ginger and cooked them off for about 30 seconds, then added the mushrooms and cooked them for a bit, then my beans, sweetcorn and peas (which were frozen). 
I added the soy and chilli sauces and a bit of water and cooked everything together.
Once it was almost done I've added the beansprouts, parsley, and spring onion and cooked them off for a few minutes.
Once it was all cooked I served it with some rice and topped it off with a bit more fresh parsley and spring onion and some peanuts.
This all made about 4 portions.

This lunch was so filling it was just what I needed to keep me going until dinner.

Dinner-19:30:

For dinner I had a big salad with some roasted potatoes. I've put some of my mum's home made Chimicurri. It was a quick meal and it tasted so good.

And that's it! That's what I ate on a lazy day at home.
